Istarska bjelica

Istarska bjelica is one of the most renowned indigenous Istrian olive varieties, primarily grown in the northern part of Istria. The olive oil from Istarska bjelica is characterized by a pronounced bitterness and spiciness, with an intense herbal aroma of freshly cut grass, artichokes, and chicory. It pairs best with complex meat dishes and mushrooms, such as beef and porcini.
